Pack a Picnic at Home

Picnics need not always be outdoor. A picnic at the comforts of your own home is as memorable as the one’s on a luscious green grounds. Is it possible? Of yours! You just need the perfect nibbles to have an indoor picnic anytime – at your own convenience even.

Today, I’ll let you in some of my favorite picnic/snack nibbles. Fancy sounding but easy to cook and perfect for anybody’s budget. What’s more, you can use your preferred ingredients to make it more personal. You can mix and match your veggies, use meats and even fish for a perfect bite! Just have them prepped in advance and you’ll never have to break a sweat.

So, say goodbye to paper plates and disposable utensils and say hello to pastel colored glasswares! Invite your family and friends and ENJOY!

Sun-dried Tomato, Basil, and Mozzarella Bruschetta
My favorite go-to snack! You can add pieces of chicken, meat or even vegetables of your choice. Don’t forget the cheese!

Ingredients
½ c butter (½ stick)
Dinner rolls, sliced in half
2 c diced fresh tomatoes, deseeded
¼ c oil (olive or vegetable)
Cheese, grated
Fresh basil, roughly chopped
Black olives, pitted and sliced
Salt and pepper
Melt butter and brush on rolls. Toast the rolls until brown. You can mix garlic powder with the butter for a garlicky taste.
In a bowl, toss tomatoes, chopped basil, olives and oil. Season to taste.
Spoon over bread. Top with cheese.
Bake until cheese melts. Serve hot. Store in airtight container.

Roasted Asparagus Salad
For the asparagus lovers, this is an easy-peasy fix for your cravings. I love its versatility hence perfect for a picnic – or a night at home.

Ingredients
Fresh asparagus, ends cut
Fresh tomatoes, diced and deseeded
2 tbsp lemon juice
⅛ c fresh cilantro, chopped
⅛ c oil (olive or vegetable)
Salt and pepper to taste
In a baking sheet, toss asparagus and oil.
Cook asparagus on a hot grill. Wait until asparagus is slightly charred and crisp. Set aside.
In a bowl, toss grilled asparagus, tomatoes, cilantro, oil and lemon juice in a bowl.
Season to taste. Serve chilled. Best served with eggs benedict.

Cranberry Spritzer
With the availability of cocktail flavored juices, you’d surely come up with a drink that speaks of your every craving. This has been my go-to mix ever since I became a fan of litre juices.
Ingredients
1 litre cranberry juice
1 litre orange juice
Ice cubes
Clear soda (you can use carbonated clear soda or sparkling water)
Fresh mint leaves
In a pitcher, mix cranberry and orange juice. You can mix and match your juice.
Chill glass before serving. Add some ice cubes and pour your juice mixture halfway through.
Pour clear soda. Garnish with fresh mint leaves.
